Food and Hope for Ukraine

Not sure about you but I can scarcely enjoy a meal without feeling guilty at present. I feel so fortunate and thank the good Lord to be able to wake up in the morning in my warm bed secure in the thought that it is unlikely that our house will be bombed before nightfall - I can’t get the images out of my head…. Cold and hungry people trudging towards the border with the few possessions they can carry in sub-zero temperatures clutching a shivering cat or a terrified child.

No doubt, like you too, we were desperate to do something to help in some way so Rory, Rachel and I did an online cookery demonstration and raised over €13,000 for the Irish Red Cross Ukraine Appeal. One of our students, Grainne O’Higgins baked brownies, invited people to help themselves and perhaps donate – her little project raised €128.00. Tessa Lomas who has spent many years on the south coast of Sri Lanka showed her fellow students how to make Sri Lankan roti filled with curried mince or cheese and tomato as well as tasty hoppers and several sambals. They were all super delicious and once again raised just over €200 for the Irish Red Cross. 
 Let’s all ask ourselves what we can do. Every little helps, companies all over the country are donating food. Ballymaloe Relish has sent a palette of pasta sauce to Ukraine. The Sheridan brothers have mobilised the cheesemakers and cheese factories who have generously donated tons of cheese, Flahavan’s porridge oats and a palette of Barry’s tea is also winging its way to the Ukraine. Many of us didn’t even know where Ukraine was until a few weeks ago, now we know the names of all its major cities, the colour of its flag and the sound of its national anthem…get the kids involved as well – they’ll come up with lots of ideas.

We have learned so much about the food of Ukraine, thanks to Olia Hercules, the beautiful, young Ukrainian cook living in London whose parents and brother are trapped in Kyiv at present. For the cookery demonstration, Rachel cooked Ukrainian ‘Angel Wings’ with Black Cardamom and homemade dulce de leche (called Anna’s Sweet Milk). 

Rory cooked Spatchcock Chicken with Blackberry and Grape Sauce served with Olia’s Roast Beetroot and Plums with Radicchio and Soft Herbs. Both Rory and Rachel’s recipes were inspired by Olia’s cookbooks ‘Mamushka’ and ‘Kaukasis The Cookbook’ published by Mitchell Beazley. I myself cooked Chicken Kyiv and Pancakes with Ricotta and Dill, both delicious. Chicken Kyiv is definitely having its moment once again. Most of us hadn’t had it for years and had forgotten how delicious it was.

Christmas Cooking Classes

We have several Christmas cooking classes coming up at the Ballymaloe Cookery School to get you in the festive mood - some live streamed and others in person.

This course may only last a single day but it is life changing: turning a potentially fraught and tedious annual task into a stress-free and pleasurable experience. You’ll learn dozens and dozens of seasonal recipes, and even more importantly how to plan ahead so that you can eat, drink and be merry for the whole holiday without worrying about how you are also going to feed everyone. For this reason many of the dishes are designed so that they can be prepared ahead of time.

The course covers both traditional and more innovative recipes including

- Scrumptious starters from seafood to warming soups

- Main dishes including the Roast

- Traditional Roast with all the trimmings

- An array of side dishes from bubbling gratins to seasonal salads

- Delicious desserts

Claire Ptak visits Ballymaloe Cookery School

We were all super excited at Ballymaloe Cookery School last week, as we had our first guest chef for almost two years.



Claire Ptak from Violet Cakes and Café on London’s Wilton Way taught a sparkling class for the current 12 Week Course students and it was beamed out to her many fans all over the world on Ballymaloe Cookery School Online.

Claire, who comes from California, started her career on a market stall in Broadway Market in Hackney. This was in 2005, soon she became known as the Cupcake Queen. People flocked to buy her adorable mini cupcakes in many flavours, made with beautiful, mostly organic ingredients. All were cooked in her tiny home kitchen but in 2010 Violet Bakery and Café was born. 


Claire baked a range of beautiful cakes with exquisitely pure ingredients, best Madagascar vanilla pods, pure cane molasses, Valrhona chocolate and limited-edition buttercream flavoured with freshly brewed espresso, homemade fruit cordials and dark caramel with sea salt. The flavours of the cakes reflect the season. She constantly experiments with flavour combinations as new foods become available.




Claire has a very unique flamboyant icing style which looks effortlessly rustic but is quite difficult to achieve. She is the acknowledged master of the delicious ‘imperfect cake’ – no fondant icing here…!

Claire didn’t just ‘pop-up’. She’s been obsessed with baking since she was little, she had her first holiday job at a local bakery in Point Reyes in California when she was just 14. Some years later, when Alice Waters tasted her baking, she offered her a job on the spot and so Claire became pastry chef at the iconic Berkeley restaurant Chez Panisse. Here, she was intrigued by the variety of exquisite seasonal berries and peaches, five different types of limes, and the nuanced flavours that influenced the food.

Word of the flavour of Claire’s cakes and café food spread around London like wildfire. She developed a cult following but it wasn’t until she was chosen to make Harry and Meaghan’s cake that her fame went global.


Claire introduced us to several new ingredients in her class. She used blonde chocolate from Valrhona to make her Triple Chocolate Chip Cookies – it tastes like caramelised white chocolate – a new flavour for me but destined to become a new favourite…

She loves to use spelt and kamut flour and dark brown sugar for some of her cakes and is really into sheet pan cakes at present. Sheet pan cakes are made in a rectangular tin with approx. 5cm (2 inch) and are brilliant for portioning and icing. Her bubble cake blew everyone away at the class. The Roast Quince and Mascarpone Cake took quite a bit of making but was so worth the effort for a really special cake. You’ll also love the Autumn Carrot Cake with prunes and walnuts and the killer Triple Chocolate Chip Cookies.

Summer Cooking Classes at Ballymaloe Cookery School

The Ballymaloe Cookery School Farm and Gardens are bursting with wonderful fruit and vegetables - it is a joyous time of the year to cook. 


We are looking forward to offering some afternoon classes later this summer with limited numbers following all Government guidelines.


First up on Friday, 23rd July will be 
Summer Cooking with Rory O' Connell. 

Rory will be using the best of the season's produce along with lots of herbs and edible flowers.


Rory will grill Mackerel and serve with a Nasturtium Leaf and Flower Butter, Peppery Courgette Carpaccio with Rocket Leaves and Parmesan will pair beautifully with this.

For main course, how about a Roast Chicken Salad with French Beans and Tarragon, served with New Potatoes and Roast Aubergines, Ricotta and Mint.

Peaches will be made into an ice and popsicles served with a compote of Cherries and Pistachio Nougatine. Strawberries will be stuffed with Lemon Basil and Peppermint Leaves will be dipped into chocolate and served iced from the freezer.


Then on Friday 30th July, come and join Rachel Allen for inspiration and fun, she will share recipes and tips for a memorable Summer Evening Dinner Party at home with friends.



On Friday 6th August, come join me for a summer foraging adventure. Foraged foods from local woods, fields, hedgerows and seashore have been an integral part of the menu at Ballymaloe House for over forty years, several decades before the current trend for foraging emerged.

I will take you for a walk in the countryside in search of wild and foraged foods. You’ll be amazed at what can be found even within walking distance. You’ll learn how to identify and use over forty seasonal wild food plants, flowers, as well as many foraged foods from the hedgerows. Free ingredients, fresher and tastier and often more nutritious than almost anything you will find in the shops. A walk in the countryside will never be the same again. Where you previously saw weeds, you’ll now see dinner! This course is suitable for chefs, professional foragers or for anyone with an interest in foraging for pleasure.

of terrific tarts to wow your friends - sweet and savory.

Guest Chef: Merlin Lebron Johnston


A couple of weeks ago the Summer 12 week Certificate Course students had a special treat, when Merlin Lebron Johnston from Portland Restaurant in London came as guest chef to The Ballymaloe Cookery School. This gentle young man is the youngest Michelin-starred chef in the UK.

His back story is intriguing. Merlin had a distinctly, rocky relationship with school, eventually he was fortunate to be sent to Ashbourne, a progressive school in Devon, where the students in conjunction with the teachers made the decision that going to lessons was not compulsory on the assumption that if they did turn up to class, they would be interested and give it their all. This worked brilliantly for 95% of the students, but Merlin was not interested in any class so he hung around for a bit…The secretary, a lady called Joanna doubled up as a cook and produced school dinner every day.


Three courses - vegetarian, organic and delicious. The students could either have packed lunches or school dinners but the latter was expensive so Merlin would plead with Joanna to give him some food, “She made rice pudding and crumbles, crème brûlée, great salads, pasta. I would beg her for some. We made a deal. If you want to cook you need to wash up, fine with me and seeing how I wasn’t that busy. I started helping her cook and after a bit she got busier and eventually I started to cook for my school at 15….” When exam time came the teachers said, “Well you seem to love cooking, we think you should be a chef”, so Merlin left and got a job. “Once I found cooking I became pretty obsessed and became totally focused on working in the best restaurants”.


For the next five years Merlin worked in top restaurants in the UK, Switzerland, France and Belgium, both classic and experimental, including In De Wulf in Belgium where there was a big focus on foraging and fermentation. At 23 he became sous chef there.

Meanwhile in London, Will Lander and Will Morganstern were looking out for a head chef for a new restaurant they planned to open in Great Portland Street, so at 24 he became head chef at Portland and was awarded a Michelin Star within 9 months of opening, the youngest chef in England to be awarded that accolade.

Culinary Superstars at LitFest 2015

Here at the Ballymaloe Cookery School LitFest HQ is hopping. There's just one month until the third Kerrygold Ballymaloe Literary Festival of Food and Wine kicks off. Becks, Rory and Evelyn are working away behind the scenes like whirling dervishes. We've had lots of great publicity - including a five page spread in the Wall Street Journal magazine which has had a terrific reaction.

I just want to take a moment to flag up the culinary superstars giving cookery demonstrations during the LitFest this year. How about this for a line-up? April Bloomfield, Sam and Sam Clark of Moro, Allegra McEvedy, Fuchsia Dunlop, A Girl Called Jack, Hugo Arnold & Leylie Hayes of Avoca Cafe and Christian Puglisi. A once in a life-time opportunity perhaps to learn from some more of my favourite chefs and cooks... and taste their food.

What to do? I've just had someone on the phone who wanted to book onto all seven, but could only choose two. An unbearable choice! So here's a little background on each one - and there's lots more information on the LitFest.ie website. Tickets are selling out fast, with a bare handful of places left on some... so don't say I didn't warn you!


April Bloomfield is considered by many to be the best woman chef in America and this is a rare opportunity to see her cook.

April burst on to the New York culinary scene with her cooking at The Spotted Pig gastro-pub in the West Village. Her food is a fusion of the comforting food she remembers from her childhood in Birmingham in England and the Italian influences she picked up cooking at the River Café in London and further influences gleaned at Chez Panisse in Berkeley, California.

You can expect fabulous, seasonal, stylish, cool and above all, delicious food from the “queen” of New York cooking.


Sam & Sam Clark of 'Moro' 
Moro and Morito have a cult following: cool, convivial, trendy surroundings with an atmosphere “that hits you like a wall of joy”. Then of course there is the food with a deliciousness that can only have been created by cooks who love the straight between the two eyes approach to flavour. Lucky for us that the two Sams took off in a camper van before opening Moro, to explore and learn the secrets to the true flavour of the great foods of Spain, Morocco and the Sahara. 





Allegra McEvedy, described by The Independent as "a caterer with conscience" is a chef and author of six books and number of television programs. Allegra has won a whole host of loyal fans for her fresh, quirky dishes made with the freshest, ethically sourced produce - all with a twist. The co-founder of the Leon restaurant group, she has worked in many of London’s best restaurants: Green’s Restaurant & Oyster Bar, The Belvedere in Holland Park, The Groucho Club and The River Café. She got her first Head Chef position at Tom Conran’s The Cow in Notting Hill, at the age of 24. 

Expect a hugely entertaining as well as informative class, with delicious tastings at the end.




Fuchsia Dunlop has been described by the Sunday Telegraph as “the best writer in the west on Chinese food” and by Observer Food Monthly as “a world authority on Chinese cooking”.
The London Independent ranked her alongside the great literary food writers Elizabeth David and Claudia Roden and Heston Blumenthal.

This is a unique opportunity to watch, listen, learn and taste some of the foods of China from one of the world’s greatest experts on the subject.



Leylie Hayes & Hugo Arnold 
Devotees of the Avoca Cafés will know that apart from the wonderful interiors that await, the next and immediate visual experience is the generous array of colourful food – bejewelled salads of all descriptions, savoury tarts, luscious soups packed with exotic ingredients, relishes, great baskets overflowing with breads, cakes, buns, bracks, ices, sweet tarts, meringues and so much more.

Leylie and Hugo will recreate some of that magic during this demonstration. Expect the sort of generous, modern, stylish, health giving food that has kept the Avoca Cafés rocking with very happy and well fed customers for the last three decades.


Jack Monroe 
Jack is “a breath of fresh air in the cooking world” – so said Nigel Slater and I quite agree.

Jack started writing her blog, A Girl Called Jack, in February 2012, in response to a local councillor who claimed that ‘druggies, drunks and single mums are ruining the High Street.’ What started as a local politics blog developed into budget food and recipes, which were picked up with interest by the national press as she detailed living with her son on a food budget of just £10 a week.

She will demonstrate recipes that were recorded on her blog and subsequently in her book also called A Girl Called Jack.

This will be an interactive event, so parents are invited to bring along one of the younger members of the household (8-12 years of age) to attend the demonstration for free and Jack will call on some of the enthusiastic juniors to join her at the demonstration counter for practical cooking fun (if they would like!)




Christian Puglisi 

Copenhagen has been the "go to" city in the world for the last few years for those in search of the most interesting, cutting edge and forward thinking food. The Nordic Food Revolution is now well documented and Christian Puglisi has been part of that movement of chefs who have made the whole world sit up and listen and look on in awe as they created a new style of cooking that can leave the diner breathless by the sheer wizardry of their creations.

From this cookery demonstration you can expect sensational dishes created by one of the new masters of world cuisine – dishes that will make you look again at food in a way that you may not have done for a long time. Don't miss this!
